Hernán Castro owns Finca Los Manguitos in San Andres, Lempira, which is in the Opalaca region of Honduras.
In this area, producers typically mill their own coffee, drying it on patios and raised beds as the weather permits. For
his processing, Hernán makes sure the coffee is picked ripe, then it allows to dry on raise beds, leaving the fruit on the
bean allowing it to “raisin-ify” around the bean. Natural fermentation occurs resulting in the creation of complex flavors
and sugars. A longer process that the traditional washed method, the natural process promotes complex fruity notes
which are clearly on display in this cup.
Los Manguitos is a family-owned farm for the past twenty years.Hernán is the third generation of coffee producers in
his family, so coffee runs in his blood. He has been working on farms since he was old enough to get involved.
