The Balboa cafe is a small co-operative with only 35 members. Mauric is the group's QC and he works closely with the growers to ensure the strict standards of the co-op are maintained.
Cherries are picked following a strict ripeness criteria, then pulped and exposed to a dry anaerobic fermentation of 20 hours.
