Making Your Own Chocolate

As we yo-yo in and out of lock down - our personal pick up option has been disabled again until we come out of Level 3.  The courier will still be coming for contactless pick ups.  Sorry for any inconvenience.

Making your own chocolate is a much more complex process than making your own coffee - accordingly we leave that to the experts: Chocolate Alchemy.

What's the Same?

Your basic cocoa (cacao) bean will have different attributes depending on what varietal it is, where and how it was grown and where and how it was processed.

The bean needs to be roasted - and the methods of home roasting are pretty similar to green coffee beans - but at a lower temperature.  The Behmor is highly recommended.

What's Different?

After roasting, you will have several more processes to go through.  These include:

  • Cracking / Winnowing
  • Grinding (don't use a coffee grinder)
  • Conching / Refining
  • Tempering / Moulding

The Chocolate Alchemy site is a very good resource for those producing chocolate at home.

Why don't we sell raw cacao beans?

It's not our area of expertise.  We've never produced chocolate at home so couldn't attest to the quality of the beans.
